| My background is in research and clinical dietetics; investigating the effects of various food components on blood lipids. I~Rve also been involved in intervention studies, looking at eating behavior changes in healthy and normal populations. I~Rve led many workshops and seminars on weight management, natural foods and low fat cooking and low fat lifestyle changes.
Recently, I~Rve turned to more practical questions in nutrition- how do people with busy lifestyles change the way they eat? How do people, especially families, acquire and prepare healthful recipes? What can we learn from other cultures~R foodways? And, of course, how can we implement basic nutritional principles into daily life?
I teach Chemistry 250, Nutrition. It is my hope that this class will empower students to make educated choices about foods, diets, and foodways.
